She graduated from <a href=\"http:\/\/www.knox.edu\" target=\"_blank\">Knox College<\/a> in 2006 with a degree in Spanish Literature, and went on to serve in the <a href=\"http:\/\/www.peacecorps.gov\/index.cfm?\" target=\"_blank\">US Peace Corps<\/a> as a Rural Health Technician in Guatemala from 2008 to 2010. She currently serves on the board of directors for <a href=\"http:\/\/www.foodrootsnw.org\/\" target=\"_blank\">Food Roots<\/a>, a nonprofit dedicated to cultivating a healthy food system for the North coast of Oregon.<\/p>\n<p>Jim Fanjoy, Emily&#8217;s husband, works on the farm as well. A <a href=\"http:\/\/www.jfanjoy.com\" target=\"_blank\">practicing architect<\/a>, he is licensed in several states and graduated from <a href=\"http:\/\/cms.bsu.edu\/Academics\/CollegesandDepartments\/CAP\/Programs\/Architecture.aspx\" target=\"_blank\">Ball State University<\/a> in 1996.
